Roasted Garlic “Cheese” Sauce

By now you may have noticed that we are dairy free here at Dose. Does that mean we don’t like cheese? Heck no! We LOVE it! But our bodies loving it is a different story. Dairy is highly inflammatory and makes most of our bodies pretty angry if we listened to it.  A lot of aches and pains disappeared when I gave up dairy. I didn’t realize how much it was hurting my body until I took it away and brought it back (blog post on that coming later in the week!)

Nonetheless, sometimes you just need something creamy to go with your meals. When you crave something cheesy but shouldn’t cave to the temptation, its great to have some creamy recipes up your sleeve, like this roasted garlic cheese sauce. It definitely hits that cheese lover spot (thats a thing, I have it. And not everything hits it.)

This week we drizzled it over some veggie pizza, two weeks ago I drizzled it over some veggie lasagna. My husband even put some of the remaining sauce in his guacamole and said it was AMAZING. Only half of my kids enjoy it because of the spicy garlic taste (they aren’t into spice and I’m ok with that since they eat everything else under the sun).

I wouldn’t recommend making this sauce in anything but a high powered blender (like the Vitamix. Yes they are worth and yes you need one.) but you certainly could try. I love Vitamix recipes because you just throw it all in there and its done!

Roasted Garlic “Cheese” Sauce
(Gluten Free, Dairy Free, Vegan)

INGREDIENTS
1 CUP SOAKED CASHEWS (AT LEAST 30 MINUTES IN HOT WATER)
1/2 CUP OF ALMOND MILK (OR OTHER MILK ALTERNATIVE)
2 TSP ARROWROOT POWDER
3 LARGE CLOVES OF GARLIC
1/2 TSP GARLIC POWDER
1 TSP VEGGIE STOCK PASTE (I USE THE BETTER THAN BOUILLON  – FINE TO OMIT IF YOU DON’T HAVE IT, YOU MAY JUST NEED TO ADD A LITTLE SALT)
DIRECTIONS
PREHEAT THE OVEN TO 400*. ROAST THE GARLIC CLOVES IN THE OVEN FOR TEN MINUTES OR UNTIL THEY ARE COOKED AND STARTING TO BROWN. AFTER THEY ARE COOKED PUT THEM AND THE REST OF THE INGREDIENTS INTO THE VITAMIX. BLEND ON HIGH FOR APPROXIMATELY ONE MINUTE OR UNTIL THE SAUCE HAS THICKENED. STORE IN A GLASS CONTAINER, SERVE AND ENJOY! GREAT FOR PASTA DISHES OR ANYTHING ELSE YOU’D ENJOY WITH AN ALFREDO TYPE OF SAUCE.
